Healthy Oat Flour Chocolate Muffins

If you are a dark chocolate lover, these muffins are for you! They remind me of a moist chocolate cake. The mix of oat flour and almond flour creates the perfect texture. The deep chocolate color comes from the cacao powder. Cacao powder is a great source of iron, magnesium and potassium. I recommend using cacao powder over cocoa powder in any baked good recipe.

Frequently Asked Questions:

350 degrees works perfectly for this recipe!

How to measure flour correctly?

Spoon the flour into the measuring cup. Then, level off the top of the cup with a knife. Do not place the measuring cup into the bag and scoop. You could end up with more flour than needed.

Why are my chocolate muffins dry?

Ensure you do not over bake your muffins by using a toothpick. Place a toothpick in the center of the muffin. If the toothpick comes out clean, they are done baking.

How to store Healthy Chocolate Muffins?

Store in an airtight container at room temperature and enjoy within 2-3 days. Store in an airtight container in the fridge and enjoy within 4-5 days. To freeze, wrap each individual muffin in plastic wrap. Place the muffins into a freezer bag. Keep in the freezer for up to 3 months.

Has anyone tried flax eggs or another egg substitute? I know there are a lot of already vegan options out there, but this one looks so good, I'm tempted.
