Healthy Chicken Stir Fry with Asparagus
To begin, this stir fry has easily become one of my favorite simple meals. It's so flavorful, but takes virtually no time to throw together. If you don't have asparagus on hand, use broccoli, string beans or cauliflower. This dish is so customizable based on what you have in your fridge.
What ingredients do I need for chicken stir fry
- boneless skinless chicken breasts (cut into 1 inch pieces)
- asparagus stalks (trimmed and cut into 1 ½ inch pieces)
- coconut aminos
- honey
- fresh orange juice
- sesame oil
- garlic powder
- ground ginger
- red pepper flakes
- sesame seeds
How do you make stir fry sauce from scratch?
Whisk together coconut aminos, honey, fresh orange juice, sesame oil, garlic powder, ginger powder, red pepper flakes and sesame seeds in a small bowl until well combined.
How do you make chicken stir fry from scratch?
Heat a pan on medium with ½ tbsp sesame oil. Add the chicken to the pan. Cook for 4 minutes per side or until the chicken has reached an internal temperature of 165 degrees F. (Note: Don’t overcrowd your pan. The chicken should be cooked in one single layer. If the pieces of chicken are on top of each other, they will not become golden, but steam instead.) Remove chicken from the pan and set aside.
Add asparagus to the pan and sauté for about 2 minutes. Pour ¼ cup water into the pan, cover the pan with a lid and cook for 2-3 minutes more. Add chicken back in and pour the sauce over the chicken and asparagus. Sauté for 1-2 minutes more and enjoy!
