1poundground turkey- I recommend a percentage around 93%. I don't recommend using 99% lean. The meat will be dry.
2 ½tablespoonssesame oil
1large minced garlic clove
½cupsliced scallions
1cupchopped mushrooms of choice
3 ½cupscoleslaw mix
1teaspoonginger powder
½teaspoongarlic powder
2pinchessalt
2pinchespepper
¼cuplow-sodium soy sauce - You can also use tamari or coconut aminos.
Instructions
Cook the ground turkey in 1 tablespoon of sesame oil on medium heat, breaking up the meat with a spatula for about 6 minutes, or until the turkey is no longer pink. Be sure to season the meat with a pinch of salt and pepper. Remove the cooked turkey from the pan and set it to the side in a bowl.
Brown garlic in 1 tablespoon of sesame oil for about 1 minute on medium heat. Add in scallions, mushrooms, coleslaw mix, ginger powder, garlic powder, salt and pepper and cook for 5-7 minutes on medium heat.
Add cooked ground turkey back into the pan with ½ tablespoon more of sesame oil and the soy sauce. Combine and cook for about 2 minutes.
Serve it as is or over rice. I added some fresh scallion, sesame seeds and Sriracha over the top.
