What kind of cottage cheese should I use?
I highly recommend using whipped cottage cheese.
When cottage cheese is whipped, it has a similar texture to ricotta cheese.
You can buy whipped cottage cheese at the grocery store. I love THIS one.
Alternately, you can whip regular cottage cheese in a food processor for a few seconds.
If you don't want to be bothered, you can use regular cottage cheese.
Ingredients for sweet toast:
- sourdough toast
- whipped cottage cheese
- fresh blueberries
- fresh lemon zest
- hemp seeds
- pure honey

Ingredients for sweet toast:
- 1 slice sourdough toast
- 3 tablespoons whipped cottage cheese or regular
- ⅓ cup fresh blueberries
- 1 teaspoon fresh lemon zest
- 1 teaspoon hemp seeds
- 1 drizzle pure honey
Ingredients for savory toast:
- 1 slice sourdough toast
- 3 tablespoons whipped cottage cheese or regular
- 4 halved cherry tomatoes
- ¼ sliced avocado
- 1 pinch flaky sea salt and black pepper
- 1 drizzle balsamic glaze
- 1 drizzle extra virgin olive oil - good quality olive oil is key!
- 1 tablespoon fresh chopped basil
Instructions
- Toast a slice of sourdough.
- Spread the cottage cheese evenly all over the piece of toast. I like using the back of a spoon for this.
- Add all of your toppings of choice.
- Enjoy right away. You cannot store this in the fridge for later. The toast will get soggy.
