Air Fryer Egg Bites

Air Fryer Egg Bites with spinach, peppers and goat cheese are low carb and keto friendly. They are also delicious and perfect for meal prep!

Ingredients
  

  • 5 eggs
  • 3 tablespoons milk
  • 1 cup spinach , very finely chopped 
  • cup red bell pepper , finely diced
  • ¼ cup crumbled goat cheese
  • ½ teaspoon salt
  • ¼ teaspoon pepper

Instructions
 

  • First, preheat your air fryer. If your air fryer has a preheating option, you can preheat your air fryer. If you don’t have that option, you can run the machine at 300 degrees F for 2-5 minutes. Leave the machine running for about 3 minutes for smaller air fryers. Leave the machine running for about 5 minutes for larger air fryers.
  • Add all of the ingredients into a mixing bowl. Crack 5 eggs and add milk, chopped spinach, diced red pepper, crumbled goat cheese and salt and pepper.
  • Whisk all of the ingredients together.
  • Grab 8 silicone muffin cups. I like to spray them with a little avocado oil just to be sure nothing sticks to them.
  • Evenly distribute the egg mixture into each cup, filling ¾ of the way. I fill each with a little bit less than ¼ cup of the egg mixture.
  • Place the filled silicone cups into the air fryer. Air fry at 300 degrees F for 9-13 minutes, or until the eggs are set.
  • If you have a smaller air fryer, complete this recipe in two batches.
  • Allow the egg bites to cool completely before removing them from the silicone cups.
