There's nothing like a gooey chocolate chip cookie for dessert. Sometimes you don't want to make a whole batch of cookies when you have a lonely cookie craving. This recipe solves that problem!

Ingredients in this recipe
- oat flour
- cinnamon
- baking soda
- melted coconut oil
- coconut sugar or cane sugar
- pure maple syrup
- unsweetened almond milk
- vegan dark chocolate chips
Expert Tips
- I used a 6 oz microwave safe cappuccino cup. You can use a larger mug, just know that it will not fill the entire mug. This mug cookie won't rise since it's a cookie, not a cake.
- The batter is on the thicker side, compared to a mug cake.
- Do not overcook this cookie. 50-60 seconds in the microwave is perfect! (The cook time may vary depending on the power of your microwave.)
- Once you let it cool for a few minutes you will get crispy edges and a gooey center - the classic chocolate chip cookie texture!
- If you want to amp this up even more, add flaky sea salt, pour some almond milk on top or add a scoop of vegan ice cream!

Ingredients
- 3 ½ tablespoons oat flour
- ¼ teaspoon cinnamon
- ¼ teaspoon baking soda
- 1 tablespoon melted coconut oil
- 1 ½ tablespoons coconut sugar or cane sugar
- 1 teaspoon pure maple syrup
- 1 tablespoon unsweetened almond milk
- 1 tablespoon vegan dark chocolate chips - (plus more for sprinkling on top)
Instructions
- Whisk together all ingredients except for the chocolate chips in a small bowl. Then, fold in the chocolate chips.
- Grease a mug. I used a 6 oz microwave safe cappuccino cup. You can use a larger mug, just know that it will not fill the entire mug. This mug cookie won't rise since it's a cookie, not a cake.
- Spoon the mixture into the greased mug.
- Microwave for 50-60 seconds. (The cook time may vary depending on the power of your microwave.)
- Once cooked, add a few extra chocolate chips on top. Let the cookie cool for 3-5 minutes. You will get crispy edges and a gooey center - the classic chocolate chip cookie texture!
- If you want to amp this up even more, add flaky sea salt, pour some almond milk on top or add a scoop of vegan ice cream!

Looks delicious. I'm trying to do no oil. Can I omit the coconut oil or replace with apple sauce? Thank you!
The texture will not be the same. It might be more like a cake rather than a cookie, but it will still taste good!

Followed instructions to the letter and had it in there microwave just 50 sec. It's bitter, so that amount of baking soda is way too much for this tiny amount of flour. It also came out dry, despite my adding a little almond milk on top as suggested. It's a no for me 🙁
