How to make vegan mug chocolate chip cookie

Expert Tips

  • I used a 6 oz microwave safe cappuccino cup. You can use a larger mug, just know that it will not fill the entire mug. This mug cookie won't rise since it's a cookie, not a cake.
  • The batter is on the thicker side, compared to a mug cake.
  • Do not overcook this cookie. 50-60 seconds in the microwave is perfect! (The cook time may vary depending on the power of your microwave.)
  • Once you let it cool for a few minutes you will get crispy edges and a gooey center - the classic chocolate chip cookie texture!
  • If you want to amp this up even more, add flaky sea salt, pour some almond milk on top or add a scoop of vegan ice cream!

Looks delicious. I'm trying to do no oil. Can I omit the coconut oil or replace with apple sauce? Thank you!

The texture will not be the same. It might be more like a cake rather than a cookie, but it will still taste good!
