Dairy Free Creamy Garlic Shrimp with Vegetables is a tasty, easy and healthy shrimp recipe! The shrimp and veggies are coated in a rich coconut milk sauce and is ready in less than 20 minutes!

Creamy Garlic Shrimp Recipe

This healthy non dairy meal is beyond delicious, but super easy to make! All you need is one pan to make this recipe and a short list of ingredients. The dish is made with garlic, shrimp, mushrooms, zucchini, sun-dried tomatoes, peas, coconut milk and spices.

Ingredients in Creamy Garlic Shrimp:

  • minced garlic cloves
  • olive oil
  • chopped mushrooms
  • chopped zucchini
  • frozen green peas
  • large frozen shrimp (peeled/deveined/tail off - no need to thaw)
  • chopped sun-dried tomatoes
  • garlic powder
  • nutritional yeast
  • coconut aminos 
  • canned unsweetened full-fat coconut milk

How to make creamy garlic shrimp:

  1. First, brown garlic in ½ tbsp olive oil for about 1 minute on medium heat. Add in chopped mushrooms and chopped zucchini and cook for about 4 minutes on medium heat.
  2. Add in the frozen peas and frozen shrimp and cook for about 5 minutes on medium heat.
  3. Next, reduce the heat to low. Lastly, add in sun-dried tomatoes, garlic powder, nutritional yeast, coconut aminos and unsweetened canned full fat coconut milk. Cook for about 4-5 minutes.
  4. Serve over brown rice or pasta. You could also serve this shrimp over cauliflower rice or hearts of palm pasta as low carb options.
