
Pistachio Chip Banana Bread
This gluten-free pistachio chip banana bread is filled with great ingredients such as oat flour, applesauce, avocado oil, dark chocolate and crushed pistachios!
Ingredients
- 2 cups GF oat flour
- 1 tsp baking powder (gluten-free)
- ¼ tsp baking soda
- 1 tsp vanilla
- 2 eggs
- ¼ cup unsweetened applesauce
- ¼ cup avocado oil
- ¼ cup maple syrup
- 2 spotty-brown bananas
- â…“ cup dark chocolate chips
- â…“ cup crushed pistachios
Instructions
- Mash spotty-brown bananas with a fork until smooth, add in maple syrup, avocado oil, applesauce, eggs, vanilla, baking soda, baking powder and oat flour.
- Mix in dark chocolate chips and crushed pistachios. Pour batter into a greased 9x5 loaf pan and bake at 350 degrees for 35-45 min. Optional: Once cooled, drizzle with dark chocolate and sprinkle with crushed pistachios.

I used to make this recipe quite a bit when I first started really baking again once I got clean (about a year and a half ago) and I decided to try it again as I had some pistachios lying around and was reminded why this is my absolute FAVORITE banana bread recipe! Honestly I should say this is really the only banana bread recipe I like as I don’t like banana bread and think it has a weird taste tbh. This is the exception tho! And it’s totally healthy, I might as well be eating oatmeal lol. So many other banana bread recipes call for a whole stick of butter (so not dairy free) and a shit ton of sugar on top of the bananas which are already sweet. My bananas weren’t super ripe so I added a tiny bit of liquid stevia as well especially since I have a major sweet tooth and upped the chocolate chip amount and it was just perfect 🙂
