Gluten Free Carrot Cake Cookies
I am a big fan of carrot cake, but I definitely don't want to bake an entire cake to satisfy my cravings. These cookies have the classic carrot cake flavors without the work of baking and frosting a cake. They are perfect to bake any day of the week to enjoy as a sweet treat or as a snack. Also, they would be a wonderful dessert to make for Easter!
Ingredients in Healthy Carrot Cake Cookies
- almond flour
- gluten free old fashioned rolled oats
- cinnamon
- egg
- coconut sugar
- softened coconut oil
- shredded carrots
- chopped walnuts
- unsweetened shredded coconut
Ingredients in Dairy Free Cream Cheese Glaze
- softened tofu cream cheese - I love Tofutti Better Than Cream Cheese – You can find it at any grocery store!
- unsweetened almond milk
- coconut sugar
How to make healthy carrot cake cookies
- Mix together all ingredients for the cookies until well-combined.
- Use a 1 ½ tbsp scoop and drop each cookie dough ball onto a sheet pan lined with parchment paper. Press and flatten to form round disks. Bake the cookies for 9-15 minutes in a 350 degree oven.
- Allow the cookies to cool on a wire cooling rack.
- While the cookies are cooling, make the glaze. In a small bowl, whisk together all ingredients for the glaze until creamy.
- Once the cookies are completely cooled, drizzle the glaze over the top of the cookies and enjoy!
- If you are not eating all of the cookies right away, do not glaze the cookies. Store the glaze in the fridge in an airtight container. Store the cookies separately in an airtight container on the counter for a couple of days.
