Air Fryer Chicken Taquitos are crispy, easy to make and delicious! This recipe is made with chicken, spices, green chilies, tortillas and cheese.

Ingredients overview:
- cooked shredded chicken - I used my Mixer Shredded Chicken, but you can also use shredded rotisserie chicken.
- canned diced mild green chilis - I recommend mild, unless you like things spicy.
- spices - A combination of smoked paprika, ground cumin, salt, chili powder, garlic powder, onion powder, dried oregano and ground black pepper!
- shredded cheddar cheese - I always shred mine fresh. It melts nicer and has less added ingredients.
- 5.5-6 inch corn tortillas - The perfect size!
- olive oil spray - For making things crispy!
Ingredient substitutions:
- protein - You can use ground beef, ground turkey or ground chicken for this recipe. Cook the ground meat with the chilis and spices before adding it to the tortilla. You can even use canned beans!
- cheese - Use monterey jack cheese, pepper jack cheese or chihuahua cheese.
How to make chicken taquitos in the air fryer?

Step 1
- Preheat the air fryer to 400 degrees F.
- Place the shredded chicken, chilies and spices into a bowl and combine. Note: The chicken does not have to be warm.
Step 2
- Wrap tortillas in a damp paper towel on a plate and microwave for 30 seconds or until warm. This will keep the tortillas from breaking when you wrap them. Only do 4 tortillas at a time.
- To assemble, place a little of the chicken filling at the bottom of the tortilla, add a sprinkle of cheese, roll and secure it with a toothpick. Make sure the toothpick pokes through the fold. Refer to the photo.
Step 3
- Spray them with olive oil on both sides.
- Place them in the air fryer in a single layer. You will probably have to cook them in 2 batches.
- Air fry at 400 degrees F for 6-8 minutes.
Step 4
- Remove the toothpicks before serving.
- Serve with salsa and avocado yogurt dip. To make the dip, mix avocado, full-fat Greek yogurt, fresh lime juice, salt and fresh cilantro.
Recipe pro-tips:
- Preheat your air fryer for even cooking.
- Be sure to place the tortillas in the microwave as instructed or they will break when you roll them.
- Make sure the toothpick pokes through the fold or it will unravel.
- Don't forget to spray both sides of the taquito or both sides won't crisp up.
