Granola Cookie Crack
This granola cookie crack is the most addictive granola I have ever created. It's basically like eating pieces of a cookie in your yogurt bowl!
Ingredients
- 1 cup GF Oats
- ¼ cup chopped nuts of choice
- ½ cup chopped dried dates
- ⅓ cup unsweetened shredded coconut
- ¼ cup carob chips or dark chocolate chips
- ½ cup creamy peanut butter
- 2 tbsp softened coconut oil
- 3 tbsp maple syrup
Instructions
- Mix together all ingredients in a bowl until well-combined.
- Crumble onto a sheet pan lined with parchment paper.
- Bake for 18-25 minutes at 350 degrees.
Notes
Yields about 3 ½ cups of granola.

Love this granola recipe! Just made it for the first time 🙂
I added hemp seeds and some vanilla protein powder, replaced dates with dried cranberries and did not add chocolate. Can't wait to have it all week with yogurt or just milk! 🙂

The recipe looks amazing but I followed the instructions to a tee and made it twice. I thought I did something wrong the first time because it came out very soft, and the second time around it also came out very soft. Not crunchy clusters, I don’t know if it’s me or my oven, I even tried baking it a little longer at 375.

Hmm I'm not sure what's going wrong. It could be the oven. I have a thermometer in my oven to ensure the temp is what it says it is because I have used ovens that were not so accurate before. The recipe does have a softer texture than typically granola though. It is truly a cross between granola and a cookie.
