Ingredients

  • 1 spray olive oil spray
  • 2 eggs - I recommend pasture raised eggs.
  • ¼ cup cottage cheese - Full fat and low fat work, but use a good quality option such as Good Culture. Some cottage cheese brands are more watery causing the eggs to become watery.
  • 1 pinch salt
  • 1 pinch pepper

Instructions

  • Add eggs and cottage cheese to a bowl and whisk well. Heat a non-stick pan on medium with olive oil spray.
  • Gently pour the eggs into the pan. Be sure not to make the pan too hot. Stir the eggs around with a rubber spatula until set. They should cook in just about 2 minutes or a little less.
  • Season with salt and pepper and serve as you would like!
