1lbfresh chicken breast tenders- (about 8 tenders)
1egg
¼cupunsweetened almond milk
½cupalmond flour
¼cupunsweetened shredded coconut
¼cupwhole wheat breadcrumbs
½tbspeverything bagel seasoning
1tsppaprika
2tspolive oil
Instructions
In a mixing bowl, combine egg and almond milk. In another mixing bowl, combine almond flour, shredded coconut, breadcrumbs, everything bagel seasoning and paprika.
Dip chicken tenders (one at a time) into the egg mixture then the breading mixture. Place the breaded chicken tenders on a pan lined with parchment paper. Drizzle/spray olive oil evenly over the chicken.
Bake in the oven at 425 degrees for 10 minutes. Flip the chicken and cook for another 10 minutes or until golden.
Serve the tenders with your favorite dipping sauce!
