In a large bowl, combine oat flour, baking soda, vanilla, cinnamon, coconut sugar, maple syrup, olive oil and water. When the dough begins to form, switch out the spoon for your hands.
Place parchment paper on a 9x13 (small) cookie sheet.
Press the dough mixture on top of the parchment with your hands. Create a square shape. (It will cover half of the cookie sheet)
Poke holes in the mixture with a fork and slice into small rectangles with a knife to mimic the look of a graham cracker. (Doesn’t have to be perfect!) Check out the image above to visually see each step.
Ensure the small rectangles are slightly spaced out on the cookie sheet and bake at 350 degrees F for 10-14 minutes.
Place the cooked graham crackers on a cooling rack to cool completely. They will harden as they cool.
Dip in chocolate, if desired and place into the freezer for about 30 minutes to allow the chocolate to harden.
