Ingredients
  

Ingredients in the Soy Citrus Sauce

  • ¼ cup soy sauce, tamari or coconut aminos
  • ½ tablespoon sesame oil
  • 1 tablespoon fresh lime juice 
  • 1 tablespoon fresh lemon juice
  • 1 teaspoon rice wine vinegar
  • 1 teaspoon pure honey
  • 1 pinch crushed dried red pepper flakes

Ingredients in the Bowl

  • ½ pound shrimp, peeled and deveined
  • salt and pepper to taste
  • ½ tablespoon avocado oil or sesame oil
  • ½ tablespoon soy sauce, tamari or coconut aminos
  • 3 cups mixed greens 
  • 1 cup cooked white rice, sushi rice, brown rice, quinoa - You can also use cauliflower rice as a low carb option!
  • ½ thinly sliced orange or red bell pepper
  • ½ cup shelled edamame
  • ½ cup diced ripe mango
  • ½ cup diced ripe avocado
  • 2 tablespoons sesame seeds

How to make the soy citrus sauce?

  • Simply whisk together all the sauce ingredients in a small bowl and set it aside.

How to cook shrimp for the poke bowls?

  • Remove the shrimp tails. Pat the shrimp dry and season both sides with salt and pepper.
  • Next, heat a pan on medium with avocado oil. Cook the shrimp for 2-3 minutes on each side or until cooked through. Small shrimp will cook faster than larger shrimp.
  • Add 1 tablespoon of soy sauce, tamari or coconut aminos to the pan. Toss the shrimp around and remove them from the heat.

Assembling and Serving the Poke Bowls

  • Now, it's time to assemble the bowls. Grab 2 bowls and place the mixed greens, rice, cooked shrimp, bell pepper, edamame, mango and avocado in each.
  • Drizzle your desired amount of sauce over the bowls. Finish with a sprinkling of sesame seeds!
