Ingredients
  

  • 6 mini cucumbers - Also known as Persian cucumbers.
  • ¼ cup sliced scallion
  • 1 ½ tablespoons tamari - Or low sodium soy sauce.
  • ½ tablespoon toasted sesame oil
  • ½ tablespoon rice wine vinegar
  • 1 teaspoon chili crisp - Use Sriracha if you don’t have the oil.
  • ½ teaspoon fresh grated ginger
  • ½ tablespoon sesame seeds
  • 1 pinch salt

Instructions
 

  • First, cut off the ends of the cucumbers and slice them into thin even slices. Toss them into a bowl.
  • Add all of the other ingredients on top.
  • Toss until all the cucumbers are evenly coated.
  • Enjoy!
