Equipment

  • Air Fryer

Ingredients

Ingredients for the meatballs:

  • 1 pound 93% lean ground turkey - I don't recommend using 99% lean. The meatballs will be dry.
  • 2 tablespoons minced yellow onion
  • 1 egg
  • 3 tablespoons fresh minced flat leaf parsley
  • ¼ cup crumbled goat cheese  - You can also use feta cheese instead.
  • ¼ cup panko bread crumbs - Use gluten free if necessary.
  • ½ teaspoon garlic powder
  • ½ teaspoon salt
  • teaspoon pepper
  • 1 spray olive oil spray - Just for spraying the air fryer.

Ingredients for the Maple Mustard Sauce:

  • 2 ½ tablespoons extra virgin olive oil  - Use good quality olive oil!
  • 2 tablespoons Dijon mustard
  • ½ tablespoon pure maple syrup
  • ½ tablespoon lemon juice
  • ¼ teaspoon garlic powder
  • ¼ teaspoon salt
  • 1 pinch pepper

Instructions

  • First, preheat your air fryer. If your air fryer has a preheating option you can preheat your air fryer. If you don’t have that option, you can run the machine at 380 degrees F for 2-5 minutes. Leave the machine running for about 3 minutes for smaller air fryers. Leave the machine running for about 5 minutes for larger air fryers.
  • Combine all of the ingredients for the meatballs in a bowl. Do not overmix the ground turkey mixture or the meatballs will be tough.
  • Roll the ground turkey mixture into balls using a 1 tbsp small cookie scoop. Be gentle when rolling the meatballs. Don't overwork them or the meatballs will not be tender.
  • Spray the air fryer basket with olive oil spray. Place the meatballs in a single layer in the air fryer. If you have a small air fryer, cook this recipe in two batches. Cook the meatballs at 380 degrees F for 8-10 minutes, or until the internal temperature reaches 165 degrees F; shaking halfway through.
  • Make the Maple Mustard Sauce while the meatballs are cooking. Combine all of the ingredients in a small bowl with a fork.
  • Serve the sauce with the meatballs!
