Equipment

  • 1 Air Fryer

Ingredients

  • 24 ounce bag red baby potatoes or Yukon Gold baby potatoes
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • ¾ teaspoon salt - adjust to taste
  • ¼ teaspoon ground black pepper
  • 1 tablespoon chopped fresh parsley
  • 2 tablespoons avocado oil spray

Instructions

  • First, boil and drain the potatoes. Cook them just until fork tender. They should take about 15 minutes. Let the potatoes cool for about 10 minutes.
  • Preheat air fryer to 400 degrees F. Spray your air fryer basket with avocado oil spray to ensure the potatoes don't stick. Arrange the potatoes in your air fryer. I normally complete this recipe in a couple of batches. This will depend on the size of your air fryer. Don't overcrowd your air fryer. Make sure each potato has space to get crispy. No stacking!
  • Use a glass with a flat bottom to smash each potato. No need to press hard. They should easily flatten.
  • Spray the potatoes with avocado oil. Sprinkle the potatoes with garlic powder, paprika, salt and pepper. Air fry the potatoes at 400 degrees F for 12-15 minutes, or until crispy.
  • Add a sprinkle of freshly chopped parsley.
  • I served the smashed potatoes with an optional lemon yogurt dip. To make this dip combine ½ cup 5% plain Greek yogurt, 1 teaspoon extra virgin olive oil, 2 tablespoons cold water, ½ tablespoon fresh lemon zest, ¼ teaspoon garlic powder, ¼ teaspoon salt, ⅛ teaspoon ground black pepper and 1 ½ teaspoon fresh chopped chives.
