1head of cauliflower(about 5 cups of cauliflower florets)
1cupalmond flour
1cuprice crumbs- (I love Trader Joe’s Rice Crumbs in place of bread crumbs for this recipe! They are a great gluten-free option, but you can substitute Gluten Free Panko Breadcrumbs instead.)
¼tspsalt
¼tsppepper
1tbspgarlic powder
1tbsppaprika
2eggs
¼cupunsweetened almond milk
olive oil(spraying/drizzling over the top - 1 tsp per batch)
½cupPrimal Kitchen’s Buffalo Sauce
¼cupcrumbled blue cheese
¼cupsliced scallion
Instructions
Start by cutting a head of cauliflower into florets and put those into a large mixing bowl.
In another mixing bowl, combine all dry ingredients (almond flour, rice crumbs, salt, pepper, garlic powder and paprika). In a smaller separate mixing bowl, whisk together the eggs and almond milk.
Coat each cauliflower floret in the egg mixture and then the dry mixture. Remove florets one at a time and transfer into the air fryer.
Spray or drizzle 1 tsp olive oil over the top of the florets. Cook them in the air fryer at 400 degrees for 15-20 minutes. Do not overcrowd the air fryer with the cauliflower. I normally complete this recipe in a few batches, but this depends on the size of your air fryer.
Place the cooked cauliflower wings into a mixing bowl. Coat in the buffalo sauce.
Serve with a sprinkle of blue cheese and sliced scallion. Best served right away.
