Ingredients

  • 2 medium-sized sweet potatoes  - They should be about 2.5 inches across and 5 inches long. If you use larger sweet potatoes, they will take longer to cook. Be sure to scrub, rinse and dry the sweet potatoes before cooking.

Instructions

  • Preheat the air fryer to 375 degrees F. Score a line down the middle of each clean sweet potato. Be sure not to cut all the way through. It’s just a shallow cut. I like doing this instead of poking holes all around the sweet potatoes.
  • Place them into the air fryer and air fry them at 375 degrees F for 30-40 minutes, or until tender. Ensure you leave space between the two potatoes so they cook evenly. You can cook up to four sweet potatoes at a time if your air fryer is large enough.
  • Enjoy as you wish!
