First, preheat your oven to 450 degrees F. Next, add ¼ cup of panko bread crumbs to a bowl with 3 tablespoons of milk. Combine and set it aside. In another small bowl, whisk together an egg with 2 tablespoons of milk. In a third small bowl, combine ¾ cup of panko bread crumbs with ¼ cup of parmesan cheese, ¼ teaspoon of salt and a pinch of ground black pepper.
In a larger bowl, place ground chicken with ½ tablespoon of mayo, ¼ teaspoon of salt, a pinch ground black pepper, ½ teaspoon of smoked paprika, ½ teaspoon of garlic powder and the soaked bread crumbs. Combine with your hands. Do not overwork the meat. Mix until just combined.
Pick up about 1 - 1 ½ tablespoons of meat with your hands and form the nuggets. Place them on a cutting board lined with parchment paper. Next, grab a baking sheet and an oven safe baking rack. Place the rack on top of the baking sheet. Spray it well with avocado oil to keep the nuggets from sticking.
Dip each nugget into the egg mixture and then the bread crumb mixture. Use one hand for the egg mixture and one hand for the bread crumbs to keep your hands from becoming breaded. Place each one onto the prepared baking sheet with the rack. Make sure there is space between each one. Spray the nuggets well with the oil spray.
Bake them in the oven at 450 degrees F for 12 minutes. (gently turning once halfway through and spraying again) Then, move the tray to the top rack of the oven and broil on high for 6 minutes, turning halfway. Every oven is slightly different. If they aren’t browned enough after 6 minutes, add a bit more spray and broil for 1-2 more minutes per side.
Let them cool for 4 minutes before serving with your favorite dipping sauce!
