- 2 cups cottage cheese - I used 4% small curd cottage cheese.
- ½ avocado
- ⅓ cup fresh herbs - I used chives, flat leaf parsley and dill. Use extra for garnishing.
- 1 ½ tablespoons fresh lemon juice
- 1 ½ tablespoons extra virgin olive oil - Good quality olive oil is key! Use extra for garnishing.
- ¼ teaspoon salt
- ⅛ teaspoon ground black pepper
- ¼ teaspoon garlic powder
Place cottage cheese, avocado, herbs, lemon juice and olive oil into your food processor.
Blend until whipped and creamy (about 60 - 90 seconds). Remove the blade. Add salt, pepper and garlic powder. Combine with a spoon.
