Ingredients
  

  • 2 cups cottage cheese - I used 4% small curd cottage cheese.
  • ½ avocado
  • cup fresh herbs - I used chives, flat leaf parsley and dill. Use extra for garnishing.
  • 1 ½ tablespoons fresh lemon juice
  • 1 ½ tablespoons extra virgin olive oil - Good quality olive oil is key! Use extra for garnishing.
  • ¼ teaspoon salt
  • teaspoon ground black pepper
  • ¼ teaspoon garlic powder

Instructions
 

  • Place cottage cheese, avocado, herbs, lemon juice and olive oil into your food processor.
  • Blend until whipped and creamy (about 60 - 90 seconds). Remove the blade. Add salt, pepper and garlic powder. Combine with a spoon.
  • Place the dip into a bowl. Garnish it with a drizzle of olive oil and chopped fresh herbs. Serve with fresh cut vegetables and crackers.
