1 ¾cupsunbleached all purpose flour- Plus, extra for working the dough.

1 ¼cupscottage cheese- I recommend 4-6% milk fat.

6spraysolive oil
1 ½tablespooneverything bagel seasoning
Instructions
First, preheat your oven to 375 degrees F. Place parchment paper on a baking sheet.
Next, blend the cottage cheese using a food processor or blender for 30 seconds to 1 minute, or until smooth.
In a mixing bowl combine flour, baking powder, salt, blended cottage cheese and an egg with a silicone spatula.
As the dough begins to form, switch out the spatula for your clean hands. Begin to knead the dough until you have a round ball of dough. If the dough is too sticky, add more flour.
Prepare your working surface. Add a sprinkle of flour to a cutting board. Divide the dough into six equal parts. Pick up one of the six sections. Roll the dough into a rope and pinch the ends to form a round circle. Repeat until you have six bagels.
Place the bagels onto the parchment lined baking sheet. Spray each bagel with a little oil spray. Sprinkle and gently press the everything bagel seasoning into the top of each bagel. Bake at 375 degrees F for 25-30 minutes.
Let cool for 15 minutes before cutting.
