Chocolate Covered Dates are stuffed with almond butter and sprinkled with almonds and sea salt. They taste like chocolate caramel candies.

Ingredients
  

  • 10 pitted Medjool dates
  • 2 ½ tablespoons almond butter
  • ¾ cup dark chocolate chips
  • 1 teaspoon coconut oil
  • 2 ½ tablespoons crushed almonds
  • flaky sea salt - optional

Instructions
 

  • Remove the pit from your dates if they are not already pitted. Place them on a cutting board or plate with parchment paper.
  • Fill each date with ½ - ¾ teaspoons of almond butter. Place the dates into the freezer for 10 minutes.
  • As the dates are in the freezer, melt the dark chocolate with the coconut oil. Place chocolate chips and coconut oil in an oven safe bowl. Microwave in 30 second increments to ensure the chocolate does not burn. (Example: Microwave for 30 seconds, stir the chocolate and then place back into the microwave.) Repeat this until the chocolate is completely melted.
  • Dip the dates one by one in the melted chocolate.
  • Sprinkle each with almonds and flaky sea salt (optional). Place the dates into the fridge for about 30 minutes, or until the chocolate has hardened. Enjoy!
