Ingredients in the Avocado Dill Yogurt Sauce:
½cupfull fat plain Greek yogurt
½avocado
1tablespoonlemon juice
2tablespoonsfreshly chopped dill
1pinchsalt and pepper to taste
Instructions
Shred the 2 zucchini with a box grater. Measure out 3 cups of shredded zucchini. Place the shredded zucchini in a colander over a bowl. Add salt and combine. Let it sit for 10 minutes.
Then, squeeze and press out the excess water with your hands. Get out as much liquid as possible to keep the fritters from being soggy.
Preheat the air fryer to 380 degrees F. Place the shredded zucchini, flour, breadcrumbs, cheese, egg, baking powder, pepper, garlic powder and paprika in a bowl. Combine with a rubber spatula.
Divide the mixture into 6 and form 6 patties. Spray the preheated air fryer with olive oil spray. Place the patties into the air fryer and spray them with olive oil spray. Air fry at 380 degrees F for 12-16 minutes, flipping halfway through.
Make the sauce while the fritters are air frying. To make the sauce, combine Greek yogurt, avocado, lemon juice, dill, salt and pepper. Once the fritters are cooked, serve them with the sauce and enjoy!
