Pat the shrimp dry on a cutting board with paper towels.
Combine the spices together in a small bowl and set it aside.
Set up three bowls for breading the shrimp. In one bowl, add the flour with half of the spice mix and combine. In another bowl, whisk 1 egg and milk. In another bowl, add panko bread crumbs with the other half of the spice mix and combine.
Preheat your air fryer to 400 degrees F.
Dip each shrimp individually in the flour mixture, then the egg mixture and then the panko mixture.
Spray the preheated air fryer basket with oil. Transfer the shrimp to your air fryer basket without stacking. Spray the shrimp with oil. Cook for 3-4 minutes at 400 degrees F. Flip the shrimp, spray again and cook for an additional 3-4 minutes, or until crispy.
Do not overcrowd the air fryer with the shrimp. Complete this recipe in two batches unless you have a large air fryer. While one batch cooks, place the cooked batch on a wire rack.
Serve the shrimp with your favorite dipping sauce! I made a sauce from avocado oil mayo, full-fat plain Greek yogurt, tomato paste, soy sauce, sriracha and a pinch of salt.
