First, make your fajita seasoning by combining 2 teaspoons chili powder, 1 teaspoon cumin, 1 teaspoon garlic powder, 1 teaspoon paprika, ½ teaspoon dried oregano, ½ teaspoon salt and ⅛ tsp ground black pepper in a small bowl. If you're using a store-bought seasoning, skip this part. 🙂
If your air fryer has a preheating option, you can preheat your air fryer. If you don’t have that option, you can run the machine at 375 degrees F for 3-5 minutes. Leave the machine running for about 3 minutes for smaller air fryers. Leave the machine running for about 5 minutes for larger air fryers.
Next, cut each chicken breast lengthwise and then into strips. Then, cut your peppers into strips and slice your onion. Don't cut the peppers and onions too thin or they will burn more easily. I personally like quite a bit of a char so I didn’t cut mine thick. It all depends on preference.
Now, toss your chicken, peppers and onions into a bowl. Pour the oil on top and the seasoning mix. Combine it all with clean hands until everything is evenly coated.
Toss the mixture into the air fryer in a single layer. If you have a smaller air fryer like me, cook the mixture in two batches. Air fry at 375 degrees F for 7-10 minutes, or until the internal temperature of the chicken reaches 165 degrees F. The chicken is cut into small pieces so it doesn’t take long to cook. Shake the air fryer basket halfway through during cooking time to keep the peppers and onions from charring too much. Remember that all air fryers are different. Cooking time may vary slightly.
Once cooked, serve the fajitas the way you would like! - In a flour tortilla, in a whole wheat tortilla, in a corn tortilla or in a bowl with your toppings of choice.
