Pumpkin Pie Protein Overnight Oats are the perfect cozy fall breakfast. This healthy oatmeal recipe is made with oats, pumpkin purée and collagen.

– old fashioned rolled oats, gluten free if necessary – ground flaxseed – pumpkin pie spice – vanilla collagen powder  – pumpkin purée – banana – almond milk – toppings of choice


Combine all ingredients except for the toppings in a bowl. Pour the mixture into a jar with a lid or an airtight container.

The next morning, top with desired toppings! This recipe makes one serving, but you can easily double, triple or quadruple it to prep your breakfast for the whole week!
