Healthy Carrot  Cake Bars

Healthy Carrot Cake Bars are absolutely delicious and made in one bowl! The bars are topped with a fluffy 3 Ingredient Cream Cheese Frosting.

Mix together all ingredients for the cake batter until combined.

Pour the mixture into an 8×8 baking pan lined with parchment paper. Bake at 350 degrees F for about 35 minutes, or until a toothpick inserted comes out clean.

Let the cake cool for about 10 minutes in the baking pan. Then, transfer it to a cooling rack to cool completely before frosting.

Allow the cake to cool completely!! I know it's hard, but you don't want the frosting to melt.

Grab your stand mixer. Use the paddle attachment on your mixer and combine the yogurt, cream cheese and maple syrup until creamy. There should be no lumps.

Evenly spread the frosting over the cake.

I added a sprinkle of extra chopped walnuts over the top. Slice into bars and enjoy!
