Gluten Free Carrot  Cake Cookies

These Healthy Gluten Free Carrot Cake Cookies are easy to make, refined sugar free and taste just like carrot cake. Plus, they are drizzled with a drool worthy dairy free cream cheese glaze!

Mix together all ingredients for the cookies until well-combined.

Use a 1 ½ tbsp scoop and drop each cookie dough ball onto a sheet pan lined with parchment paper. Press and flatten to form round disks.

Bake the cookies for 9-15 minutes in a 350 degree oven. Allow the cookies to cool on a wire cooling rack.

While the cookies are cooling, make the glaze. In a small bowl, whisk together all ingredients for the glaze until creamy.

 Once the cookies are completely cooled, drizzle the glaze over the top of the cookies and enjoy!
