Fall Harvest Salad with Chicken and Creamy Balsamic Dressing is a healthy and flavorful fall salad! It’s made with arugula, apple, pumpkin seeds and feta.
Whisk together all ingredients for the Creamy Balsamic Dressing in a small bowl until combined. Set aside. You can also use a small mason jar and shake all the ingredients together to combine.
Next, add chicken breast to a bowl and coat in avocado oil and spices. Heat a pan to medium. Place the chicken into the pan and cook 4-6 minutes per side. Transfer the chicken to a cutting board and slice.
Assemble all ingredients for the salad. Place the arugula, apple, feta, onion, pumpkin seeds and chicken into a salad bowl. Pour the dressing over the top, toss and enjoy!
