Healthy No Bake Peanut Butter Oatmeal Cookies

Ingredients
  

  • ¼ cup melted vegan dark chocolate (no added sugar) I love Lily’s Chocolate Chips or Lakanto Chocolate Chips. If you want to purchase some of the chocolate chips from Lakanto’s website, you can use my code “FROZENB15” for 15% off your purchase.
  • cup natural creamy peanut butter
  • 1 tbsp melted coconut oil
  • ½ cup gluten free old fashioned rolled oats
  • flaky sea salt - optional

Instructions
 

  • Mix together melted dark chocolate, peanut butter, coconut oil and oats in a mixing bowl.
  • Use a 1 ½ tbsp cookie scoop and drop the cookies onto a sheet pan lined with parchment paper. Sprinkle with sea salt, if desired.
  • Place the sheet pan in the freezer for about 1 hour or until the cookies harden. Store in the freezer and grab a cookie whenever you are craving a sweet treat!
