Ingredients in Summer Rolls
10rice paper wrappers
½ blockextra firm tofu (About 6-7 oz) sliced into strips
¾cupthinly sliced carrot
¾cupthinly sliced purple cabbage
½cupfresh chopped cilantro
Ingredients for Peanut Dipping Sauce:
2tbspcreamy peanut butter
1tbspapple cider vinegar
How to cook tofu for summer rolls?
Use a paper towel to pat the tofu dry and drain the moisture. Cut the tofu into strips.
Sprinkle the spices and coconut aminos evenly over the tofu. Transfer the tofu into an air fryer.
Spray/drizzle avocado oil over the top of the tofu. Cook in the air fryer at 400° Fahrenheit for about 15-20 min.
How to make peanut sauce for summer rolls?
Whisk all ingredients together in a small bowl until the sauce is creamy.
How to make tofu summer rolls?
Lay out all ingredients for the summer rolls. (cooked air fryer tofu, carrot, cabbage, avocado and cilantro)
Pour warm water into a bowl. To make the summer roll, dip the rice paper wrapper in warm water for a few seconds until the rice paper is pliable. After dipping your rice paper in warm water, lay wrapper onto a plate or cutting board. Fill each rice paper wrapper with a piece of tofu, a couple slices of carrot, cabbage, avocado and a sprinkle of cilantro. Place all the ingredients just below the center of the wrapper. Fold uncovered sides inward, then tightly roll. Repeat until all of the filling is used.
Serve with the peanut dipping sauce and enjoy!
