Oven Baked Chicken Tenders

This homemade chicken tenders recipe is an easy weeknight meal. The chicken strips are baked with minimal oil and very tasty!

Ingredients
  

  • 1 lb fresh chicken breast tenders - (about 8 tenders)
  • 1 egg
  • ¼ cup unsweetened almond milk
  • ½ cup almond flour
  • ¼ cup unsweetened shredded coconut
  • ¼ cup whole wheat breadcrumbs
  • ½ tbsp everything bagel seasoning
  • 1 tsp paprika
  • 2 tsp olive oil

Instructions
 

  • In a mixing bowl, combine egg and almond milk. In another mixing bowl, combine almond flour, shredded coconut, breadcrumbs, everything bagel seasoning and paprika.
  • Dip chicken tenders (one at a time) into the egg mixture then the breading mixture. Place the breaded chicken tenders on a pan lined with parchment paper. Drizzle/spray olive oil evenly over the chicken.
  • Bake in the oven at 425 degrees for 10 minutes. Flip the chicken and cook for another 10 minutes or until golden.
  • Serve the tenders with your favorite dipping sauce!
