  • ½ lb ground turkey
  • 1 tbsp sesame oil
  • 2 minced garlic cloves
  • ¼ cup sliced scallions
  • ½ cup sliced mushrooms of choice
  • 3 cups coleslaw mix
  • ½ tsp ground ginger
  • 2 tbsp coconut aminos or low sodium soy sauce - (No longer gluten free if low sodium soy sauce is used.)

  • Cook ground turkey in ½ tbsp sesame oil on medium heat for about 4-5 minutes or until cooked through (stirring to break up clumps). Remove the cooked turkey from the pan and set it to the side in a bowl.
  • Brown garlic in ½ tbsp sesame oil for about 1 minute on medium heat. Add in scallions, mushrooms, coleslaw mix and ground ginger and cook for 4 minutes on medium heat.
  • Add cooked ground turkey back into the pan and cook for 1-2 minutes. Pour in the coconut aminos.
  • Serve as is or over brown rice. I added some fresh scallion, sesame seeds and Sriracha over the top.
