Easy Vegetable Pasta Soup
This Easy Vegetable Pasta Soup is a healthy and simple meal to make any night of the week. Add in some beans and call this a pasta e fagioli!
- 3 cloves minced garlic
- ¼ cup diced white onion
- ¼ cup diced carrots
- ¼ cup diced celery
- 1 tsp olive oil
- ½ tsp salt
- ¼ tsp black pepper
- ½ tsp paprika
- 1 tsp garlic powder
- ½ tsp dried dill
- ½ cup frozen peas
- 2 cups fresh spinach
- 1 cup canned crushed tomatoes
- 2 ½ cups beef bone broth (feel free to sub veggie stock)
- 1 cup dried whole grain elbow macaroni
Grab a saucepan and sauté the garlic and onion in olive oil for 2-3 min on medium heat. Add the carrots, celery and spices and cook for 5 min. Add in the frozen peas, spinach, crushed tomatoes and bone broth.
Cover and allow the soup to cook on low for 20 minutes. Remove cover and add in pasta. Raise the heat to medium and cook until the pasta is done (About 8-12 min. depending on the type of pasta you used.)
When I serve the soup, I personally love to add a sprinkle of parmesan cheese!
