Rainbow Chickpea Salad

This rainbow chickpea salad is a great side dish or meal prep option. It is filled with a variety of veggies and served with a delicious Mustard Tahini Dressing!

Ingredients for Salad:

  • 1 can or 1 ½ cups chickpeas rinsed and drained
  • ¾ cup cherry tomatoes
  • ½ cup chopped baby carrots 
  • ½ cup chopped assorted baby peppers
  • ¼ cup chopped red onion
  • ¼ cup feta cheese

Ingredients for Mustard Tahini Dressing:

  • 1 tbsp dijon mustard
  • 1 tbsp tahini
  • 1 tbsp avocado oil
  • 2 tbsp fresh lemon juice
  • 1 tsp garlic powder
  • 1 tsp dried dill
  • ¼ tsp salt
  • ¼ tsp black pepper


  • Mix together chickpeas, tomatoes, carrots, peppers, red onion and feta cheese.
  • In a small bowl, combine mustard, tahini, avocado oil, lemon juice, garlic powder, dill, pink salt and black pepper until creamy. Pour the dressing over the vegetables.
