Curried Chicken Salad
This mayo-free curried chicken salad could not be easier to make and is filled with flavor. It can be served three different ways and is the perfect lunch box meal!
Servings 4 people
- 2 cups chopped grilled chicken After a BBQ or for meal prep sometimes I will have extra grilled chicken on hand. This is a great way to use it!
- ¼ cup diced red onion
- ½ cup diced celery stalks
- 2 chopped dates
- ⅓ cup plain Greek yogurt
- 1 tbsp olive oil
- 2 tsp curry powder
Combine all ingredients in a mixing bowl. Serve on a wrap, on a bed of greens or on crispbreads.
This is a great meal prep option and because you can serve it in different ways, you won’t get bored! Store in a container in the fridge.
