coconut curry tofu

This coconut curry tofu is SO flavorful and an easy to make vegetarian meal! All you have to do is air fry the tofu, make the sauce and marry the two!

  • Air Fryer


  • ½ block extra firm tofu (About 6-7 oz)
  • ½ tbsp curry powder
  • 1 tsp avocado oil

Ingredients for Coconut Curry Sauce:

  • ½ tbsp avocado oil
  • ½ cup sliced scallions
  • 1 tbsp minced garlic
  • 1 tbsp red curry paste
  • ½ tbsp curry powder
  • ½ tbsp coconut aminos
  • ¾ cup unsweetened canned full-fat coconut milk
  • ½ cup vegetable stock


  • Cut tofu into 1/2 inch slices and use a paper towel to pat dry and drain the moisture. Slice into cubes. Sprinkle the curry powder evenly over the top of the tofu.
  • Transfer the tofu into an air fryer sprayed or drizzled with 1/2 tsp avocado oil. Spray/drizzle another 1/2 tsp avocado oil over the top of the tofu. Cook in the air fryer at 400 degrees for about 15-20 minutes.
  • To make the sauce, sauté garlic and scallions in avocado oil for 1-3 minutes until golden brown. Add all other ingredients. Cook on medium heat for 7-10 min. Add in the tofu and serve with rice, cauliflower rice or naan bread.


Makes about 1 large serving or 2 smaller servings.
