Protein Blender Muffins

These protein blender muffins couldn't be simpler to make - throw all ingredients into a blender and bake! They are sweetened with a few dates and banana.

Servings 6 muffins

Ingredients

  • 1 cup GF oats
  • ½ cup vanilla protein powder
  • 1 tsp baking powder (gluten-free)
  • 2 tsp cinnamon
  • ½ cup plain Greek yogurt
  • 1 banana
  • 3 pitted dates
  • ½ cup cold water 
  • 2 tbsp avocado oil

Instructions

  • Toss all ingredients into a blender. Blend until batter has formed. Line a muffin tin with six liners or use silicone liners as I did.
  • Use a 1/3 measuring cup and pour the batter into each muffin liner. Bake the muffins in a 350 degree oven for 25-30 minutes.
