Protein Blender Muffins
These protein blender muffins couldn't be simpler to make - throw all ingredients into a blender and bake! They are sweetened with a few dates and banana.
Servings 6 muffins
- 1 cup GF oats
- ½ cup vanilla protein powder
- 1 tsp baking powder (gluten-free)
- 2 tsp cinnamon
- ½ cup plain Greek yogurt
- 1 banana
- 3 pitted dates
- ½ cup cold water
- 2 tbsp avocado oil
Toss all ingredients into a blender. Blend until batter has formed. Line a muffin tin with six liners or use silicone liners as I did.
Use a 1/3 measuring cup and pour the batter into each muffin liner. Bake the muffins in a 350 degree oven for 25-30 minutes.
