Cinnamon Carrot Loaf
This Cinnamon Carrot Loaf is made with wholesome ingredients such as whole wheat pastry flour, cinnamon, shredded carrot and maple syrup. It is extremely moist and perfectly sweet!
Servings 1 loaf
- 2 cups whole wheat pastry flour
- 1 tbsp cinnamon
- 1 tsp baking powder (gluten-free)
- ½ tsp baking soda
- 2 eggs
- ¼ cup unsweetened applesauce
- ¼ cup softened coconut oil
- ¼ cup maple syrup
- ¼ cup cold water
- ½ cup grated carrots
Combine all ingredients in a mixing bowl until batter has formed.
Pour batter into a greased 9x5 loaf pan and bake at 350 degrees for 30-40 min. Optional: Once cooled, drizzle melted white chocolate over the top.
