Coconut Flour Pancakes

These coconut flour pancakes are made with 4 ingredients, are gluten-free and take minutes to make!

  • ½ mashed banana
  • 2 tbsp coconut flour
  • ¼ cup unsweetened almond milk
  • 2 eggs


  • Place all the ingredients into a bowl and mix to create the pancake batter.
  • Heat and grease a pan on medium. Spoon the batter onto the pan. You may make mini pancakes or a couple of larger ones.
  • Cook one side until you see bubbles form on top. Flip the pancakes and cook on the other side until browned. Serve with your favorite toppings!
