Ingredients in the sauce

  • ½ cup fresh orange juice (about 2 oranges)
  • 1 tablespoon raw honey
  • 1 tablespoon apple cider vinegar
  • 2 tablespoons coconut aminos
  • ¼ teaspoon ground ginger
  • ¼ teaspoon ground turmeric
  • ¼ teaspoon dried red chili flakes
  • ¼ teaspoon garlic powder
  • teaspoon salt
  • teaspoon ground black pepper
  • ½ tablespoon tapioca flour
  • ½ tablespoon water

Ingredients in the chicken

  • ½ pound ground chicken meat
  • ½ tablespoon sesame oil
  • ¼ teaspoon salt
  • ¼ teaspoon ground black pepper
  • 1 cup white rice, brown rice, cauliflower rice or zoodles
  • sesame seeds and sliced scallion for serving

  • In a small bowl, make a slurry. This is the mixture that will thicken the sauce. Whisk together ½ tablespoon tapioca flour and ½ tablespoon water. Set this aside.
  • Next, in a saucepan on medium heat, add orange juice, honey, vinegar, coconut aminos and spices. Cook for 2-3 minutes.
  • Lower the heat, add the slurry mixture and whisk. Whisk until the mixture begins to thicken. Once the mixture is thick, remove from the heat.
  • Now, it's time to cook the chicken. In a pan on medium heat, brown the ground chicken in sesame oil. Break up the chicken as it cooks with a wooden spoon. Cook for about 4-5 minutes and then add salt, ground black pepper and the orange sauce to the chicken. Sauté everything together for about 1-2 minutes.
  • Serve the chicken over white rice or brown rice. Alternatively, you can make this meal paleo-friendly and use cauliflower rice or zoodles.
  • Top with sesame seeds, sliced scallion and enjoy!
