- ½ cup almond flour
- 2 tbsp cacao powder
- 3 tbsp cashew butter
- 2 tbsp date syrup
- ½ tsp vanilla
- ½ tsp peppermint extract
- ½ cup dark vegan chocolate chips
- ½ tsp olive oil
- Mix almond flour, cacao powder, cashew butter, date syrup, vanilla and peppermint extract. Use a 1 Tbsp scoop, roll into balls and place into freezer for 20 minutes.
- While they are hardening, melt the chocolate down with olive oil in a saucepan on low heat until completely melted.
- Remove the balls from the freezer and coat each in dark chocolate. Place back into the freezer to harden for an hour. Store in the fridge.
